Ingredients
2 cups rice
3 chicken breasts / Sunfed chicken
1 tablespoon honey / sweetener
1 tablespoon soy sauce
2 tablespoons hoisin sauce
1 teaspoon vinegar
1 teaspoon chilli flakes
1 clove garlic
1 tablespoon oil
Red cabbage
Grated carrot
Red onion
Bok choy
Mushrooms
Method
Wash rice in water and add to pot with 4 cups of water
Pop on boil until the rice is half cooked then finish simmering
Add all the sauces to the chicken / Sunfed chicken and let marinate (can do this the night before if you want)
If using chicken - slice chicken then fry in hot pan with the oil and let the outside of the chicken sizzle, then cover with a lid and let cook for a further 15 minutes, flipping often
If using Sunfed chicken - fry in hot pan with the oil for 2-3 minutes with minimal stirring
Slice up all of your veggies
Fry the mushrooms in a pan until slightly soft
Steam the bok choy
Assemble the rice, veggies and chicken on a plate with a big dollop of homemade hummus in the middle
