Leftover Hash

Ingredients

ANY leftover vegetables you have in the fridge from a roast the night before or a family cook up e.g. broccoli, potatoes, kumara, pumpkin, onions, asparagus, peas ANYTHING


½ tablespoon olive oil

Mushrooms

Spring onion

Cajun spice


2 tablespoons yoghurt

Lemon juice

Mayonnaise


Method

Cook up all your leftover veggies in a big non-stick pan in the olive oil


Add the mushrooms, spring onion and the cajun spices


Use a spatula to keep the veggies turning so they come out like a big yummy mash of goodness


SO EASY


Pop the mash on a plate and add an optional topping:

- eggs

- salmon

- Sunfed bacon or chicken

- falafel


Mix up the yoghurt, lemon juice and mayonnaise to make a dressing then drizzle on top
