Pad Thai


Olive oil

500g chicken or Sunfed chicken


1 zucchini sliced into matchsticks

2 spring onions

25g nuts of choice

Red onion

Red cabbage

Tamarind paste

Lemon juice

1 tablespoon fish sauce/soy sauce

1 teaspoon chilli powder

1 tablespoon sugar free maple syrup

Rice or noodles

Lime wedges and sprouts to serve


Fry garlic and red onion in oil for a few minutes

Slice chicken / Sunfed chicken into thin strips then add to the pan, fry until golden colour then remove and set aside

Chuck zucchini and red cabbage into the pan and cook for 3-4 minutes, making sure they remain semi crunchy

Cook noodles or rice

Add chicken / Sunfed chicken mix back into the pan along with the nuts, coriander and spring onions

Add the cooked noodles or rice and toss through the rest of the mix

Mix tamarind, lemon juice, fish/soy sauce, chilli powder and maple syrup together then add to pan to heat for a few more minutes while the noodles absorb the sauce

Serve with slices of lime and top with extra nuts and sprouts
