Ingredients
½ cup flour
1 teaspoon baking powder
½ teaspoon salt
3 eggs beaten
1 can cream style corn
1 can chickpeas (slightly blended)
1 can whole kernel corn drained
1 tablespoon oil
Method
Mix the flour, baking powder and salt in a bowl together
Add in the beaten eggs, chickpeas, corn and creamed corn into this mix and fold through
Spoon fritter sized dollop of mixture into the pan with the oil (this mixture makes approximately 10 fritters)
Cook for 2-3 minutes each side
Optional - add in some minted peas to get some extra veggies in
Add some toppings for extra protein:
- salmon
- protein yogurt + lemon juice + mustard + garlic
- spinach leaves + red onion
