Tzatziki Meatballs

Ingredients

500g mince (plant or meat)

½ white onion chopped finely

2 cloves chopped garlic

Fresh or dried parsley

1 teaspoon dried oregano

1 large egg

½ cup flour (any kind)

Pumpkin

Olives

Grated cucumber

Feta cheese

Tomatoes

1 teaspoon dried oregano

½ cucumber grated

Lemon juice

2 tablespoons high protein yoghurt

1 clove crushed garlic

Lemon zest

Fresh or dried dill


Method

Meatballs

Put the mince, onion, garlic, parsley, oregano, egg and flour into a bowl and mix together until combined well


Make into a meatball shape and place on some baking paper to breathe while you make the salad and sauce


Cook in a non stick pan turning until golden and slightly sizzled on each side


Salad

Cut up pumpkin into bite size pieces and bake at 200C for around 20 minutes


Cut up tomatoes, grate cucumber, halve the olives and crumble feta cheese onto a platter


Toss pumpkin through the salad once cooked then add oregano and salt and pepper


Tzatziki

Pop the lemon juice, yoghurt, crushed garlic, lemon zest and dill into a bowl and mix well


To serve

Salad on the bottom, meatballs in middle then top with tzatziki
