Vermicelli Salad

Ingredients

500g chicken or Sunfed chicken

Oregano

Chilli flakes

3 garlic cloves


2 tablespoons fish or soy sauce

2 tablespoons chilli sauce

2 tablespoon lemon juice

1 tablespoon maple syrup

1 teaspoon lemon zest (optional)


1 pack vermicelli noodles

1 cucumber

Tomatoes

Herbs - parsley/mint/coriander

Mushrooms

Red or green cabbage

Red onion

Spinach


Method

Cut chicken / Sunfed into thin strips and let marinate in fridge with the oregano, chilli flakes and garlic


Put the fish/soy sauce, chilli sauce, lemon juice, maple syrup and lemon zest into a wee bowl, mix then pop in fridge


Cook noodles for 3 minutes then drain


Cut all the veggies and add to the drained noodles


Fry chicken / Sunfed strips then add to the veggie and noodle mix


Cover everything in sauce and mix through
